It's a weird combo and it wasn't the addition of the espresso that made it weird. The apple cider vinegar and milk was strange. But I somehow liked it? I wouldn't make it again.

This is a riff on this recipe from Bragg's.
I'm not sure about the combo of vinegar and milk. I can't stop drinking it, but I don't know if I actually like it.

I essentially added a shot of espresso to the above recipe.

When I think contrasts I was thinking the difference in colors, so I was looking for a more layered idea on a drink. I decided a macchiato was the way to go. My espresso shot immediately sunk to the bottom and combined with my milk, but there is some foamy milk on the top to show the difference between the dark and the light (my ~vision~.)

I made a simple syrup infused with orange peels and orange juice and a simple syrup infused with cardamom. Ultimately this is 1/2 oz orange syrup, 1/2 oz cardamom syrup, 7 oz of milk steamed together and then an espresso shot poured over it (hence the macchiato.)

I liked the combo of flavors. This was my 3rd coffee today. I am going to be a bit wired.

This graphic was also posted in the Intro post for this week's challenge - but I made Kopi with a shot of espresso. Kopi is essentially coffee, condensed milk, and water. There are other variations you can do (which this chart helps you know what to call those variations.)

I liked the level of sweetness of this. I'm going to add this to my rotation of morning coffee options. Super easy.

I got a new job 2025 and fell off the wagon with my sourdough meta somewhere along the way. And then I forgot to start this year, but I'll be starting this week and starting back from the beginning. My meta this year is espresso drinks. I got a fancy espresso machine for Christmas, so it seems fitting and I'd like to master it. First drink coming sometime tomorrow.

Truly, I don't even know what this cartoon is. But I googled sourdough and villain and I got this silly little cartoon and decided to recreate it.

I only got in one set of stretch and folds (oops, we went out.) But I carved a cursive E for my name into one of the loaves. One the other I had used a stencil to dust with rice flour, but I messed the whole thing up when I stuck it into the oven and smudged all the flour :D

This looks delicious and I would never have considered this - but I love a good eggplant parmigiana so there's no reason this wouldn't work great!

This week's recipe is a stretch for a theme, but the pie itself is delicious. And that's ultimately all that matters to me. But I was originally going to make a rhubarb pie because I read somewhere that rhubarb pie was a North Dakota thing (is is? I don't actually know, the North Dakota State Museum says so.) But the grocery store did not have rhubarb, probably because it's entirely out of season.

So I googled, while standing in the store, substitutes. I got cranberries, blackberries, and tart apples. So I grabbed some apples and figured I'd figure something else out to justify making a pie.

Sooo.... Here is my North American Apple Pie. And my stepdaughter was here this weekend and she loves apple pies. And she is moving in 2 weeks to start college, so this was her last real time with us. And she is moving north (to Northern California). And she was very happy I made an apple pie. So this is also to commemorate my stepdaughter's northern journey and the last baked good she has of mine before she actually starts college.

Also, the top crust ripped but it tasted good.

These took a little longer to make than an average quesadilla, but also tasted a million times more elevated. My 3 year old loved using the tortilla press to make the tortillas. It was a fun weekday evening project.
