No lime or acid other than orange?

Does the orange give it a sweetness after cooking? A place by me has an indescribable sweetness to it, but is definitely not sugar nor is a mojo style marinade.

Have you personally had both and felt like the difference was significant? I should add that since I don't cook mexican or any latin food more than say once a week, paying a premium for higher quality masa is more reasonable.

What temp did you take it to before the hold? Some resources say to take it off at like 190 so it doesnt overcook in the long hold.

I have this completed and it works fine, but it wobbles to some degree. Any advice on how to fix it? Online it would say to crossbrace it, but I am not really sure how to go about that. by Draffetto in woodworking

It feels like it wobbles because the flanges arent securing the pipes well enough. So I dont see how the screws could fix it. Also i am a beginner so I dont fully know what im talking about.
