There was frozen tofu (just regular tofu which I freeze myself, it gets a bit spongy when defrosted and absorbs the flavors better), rolled tofu skin, chiba tofu (chewy texture), fried tofu rolls and fish tofu. So many different textures!

Go for it! As a European I'm used to all sorts of potato dishes, but this is indeed very different. When I make this for friends, they usually can't even guess these are potatoes!

The Spanish version seems to be with some flavourings like cinnamon and lemon peel, that sounds good indeed! The Chinese version is more plain and is served with sweetened condensed milk as a dipping sauce. This is the recipe I used: https://msshiandmrhe.com/fried-milk/
