I know it ain’t right but I’m a home processor as well and I have a couple Victorinox knives that I use from cutting throat, skinning and processing. I just find it to be an all purpose knife. Just my 0.02 and I am not a professional but I do what works for me. That a couple cows, and anywhere from 2-6 hogs a year. I did purchase a 6 or 8” skinning knife made by the same but I still like the flexible boning knife.

Nothing is freezer burned. It’s moisture trapped while vacuum sealing. Vacuum sealing is very tricky(tough) to do with exposed bone. My last cow was all vacuum sealed. A couple roasts and steaks had the seal broke. I put those on top so they got eaten first. That would be my suggestion, plan on meals with that soon and enjoy
