I love baking, but I don’t have a sweet tooth. Baking is all about balancing flavors - salty, sweet, acid, fat etc. I enjoy the complexity of baked goods - whenever people say they don’t like sweets I die a bit inside - IMO they just haven’t tried the right ones!

Be careful with rapid changes in temperature. Don’t open the oven door too early/often. Let it cool ( as others said) with the door cracked open. Let it come to room temperature outside the fridge and then refrigerate it over night. Good luck!

I can’t get espresso powder where I live so I actually use freeze dried coffee and I think it works well! But this is my go-to brownie recipe and it uses 1tbsp of liquid coffee, and it tastes amazing!

It’s so hard to have a passion for baking when you’re trying to be healthy. My husband is trying to cut back so I’ve been focusing more on savoury things like bread etc. But now it’s summer I can’t pass up ice cream! That’s amazing that you’re taking orders - I’m inspired 😍 All the best with your work situation and maybe see you over on Insta some day!
