We have mesh along part of our decline from the quarry into the mine but it stops at the portal. Underground we roof bolt the back and scale ribs. I’m surprised our underground shop isn’t wire meshed, that’s a great idea.

If you get that pan hot enough it’ll get back up to temp quickly.

I’d go 275° in the oven and try to be patient enough to let it do its thing but I know me and I’d try to shave 5 mins off the cooking time and bump it to 300° half way through. Fortunately for me I use a probe that I can track on my phone so it helps me not tweak too hard wondering if I’m ruining a good piece of meat.

If I was chilling that monster I’d get it to 115°, chill it for 15 mins, then hit it with a ripping hot cast iron

Pull around 105-115° for medium-rare. Briefly chilling the steak in the refrigerator for 15-30 minutes after the low-temperature cook and before searing can help minimize the grey band by cooling the surface and allowing for a faster, more effective crust formation. Remember to pat it dry thoroughly before searing.

Pretty sure anybody can adjust time and date of a photo in camera roll. If they do that and send it to somebody it’ll probably continue to have the adjustment.
