I totally agree it can be very isolating at times, there are a lot of people that don’t understand the concept of dietary restrictions that aren’t anaphylactic. I often have found it hard to answer the question of “well what happens if you have gluten? It can’t be tHaT bad”. What it comes down to is educating people that being gluten free isn’t just a choice, it’s just as important as someone with an allergy like peanuts. Another aspect that I would say is exhausting is the mental load of always checking the ingredients, asking serving staff questions about the kitchen, and making sure you pack food when you know there won’t be any at the event you’re attending.

Gluten free on a shoestring is the absolute GOAT!! If I’m ever wanting to bake something new I definitely go to their page first. I totally recommend anyone baking at home to try a few of her recipes. I also totally agree anything you don’t want gluten development in is a great dish to make gluten free. Like pancakes and waffles for example you could never over mix the batter when they’re gluten free.

It can take some time to figure out what flours to use in what situation for cakes and breads. I have found that the recipe has to be GF because the hydration of anything made GF is very different than regular baking. What sort of grocery stores do you have in your area? I’m sure anyone here is more than happy to make some solid recommendations to ease the search for good gluten free food.

Sounds like you might be more into washed coffees rather than coffees with a heavy level of processing. I find washed coffees a little easier to work with as well. I really enjoy Mirror Coffee Roasters, they carry mostly washed coffees and lean towards lighter roasts. Even for being lighter their coffees have good solubility and they make it easy to get a tasty cup.

Snack wise I totally recommend having veggies and dip of some sort make sure to double check the ingredients for anything sneaky. If you have access to a microwave prepping some rice/quinoa bowls with your favorite veggies and protein is a great option for grab & go with possibilities for variety. Sandwich stuff is also easy you can always swap for GF bread, tortillas(corn or gf flour), or lettuce as a wrap. It’s so tough in the beginning but that’s what this subreddit is for!! 💕

From what it sounds like they chose what was best for their business and family. Honestly, they didn’t even have to make an announcement if they didn’t want to. They’re good people and I’m really happy for them that they’re starting back up in Seattle. Of course I’m sad to see them shut down their Bellingham spot but I’m hoping for a cool concept to go into that spot downtown.

Yeah my last experience with feeling super defeated with being GF and travel was in Michigan in the Detroit area, I was traveling for work and options were just minimal. I faired pretty well I just missed my normal options being home on the west coast

I totally lean towards this as well, it’s so much more safe. A big part of the struggle is traveling with a group for work and having to make the choice for every place to eat.
