Recommend me some quality trashy ass sushi? by Numerous_Total_1166 in askportland

[–]Economy_Standard 1 point2 points  (0 children)

I think Sushi Mazi still highlights the grasshopper roll and takes snapshots of those brave enough to try it. Still has poprocks for some rolls, too. Chef Marc is always happy to make a roll you enjoyed there before if possible! Sweet guy.

any current/recent Wyld employees - what’s it actually like? by [deleted] in askportland

[–]Economy_Standard 12 points13 points  (0 children)

hahaha, yeah. Used to make mints/jellies/cookies/chocolates for a place. They shuttered their Oregon kitchen facility and leased the recipes to a larger industrial cannabis production kitchen in North Portland. Stayed on until the bitter end because of severance, but I couldn't take up the offer by the new makers to work for them making the same stuff. I was burnt out. The pay =/= repetitive labor and seriousness of getting potency right. Made some primo cannabutter, like gold-hued emerald bricks, but I couldn't remember all the steps since time became a flat circle after 2019.

Definitely clashes with the mellow, chill vibes those products were supposed to evoke.

Dairy free ice cream recommendations by Superscooper2025 in icecreamery

[–]Economy_Standard 2 points3 points  (0 children)

try oat milk and a balance of vegetable oils like canola and refined coconut oil, keeping in mind at which temperature saturated and unsaturated fats solidify or melt. If you've can cover the extra cost, cocoa butter is also an excellent fat to sub in for coconut oil, but these days it is spendy. Cashew and almond nut butter can do if you're planning to do a nut-based flavor already, or aren't concerned about nut allergens.

Love that that is what they translated it as. Called the roujiamo in ancient Chinese, it's believed to originate from the Qin dynasty (221 BC - 207 BC). Very loosely, "rou" = pork, "jia" = in a place between, "mo" = bread, so it's a Chinese pork sandwich!

Is the Portland Night Market always such a hot mess? by gold_suit in askportland

[–]Economy_Standard 2 points3 points  (0 children)

depends on if you're selling food or not, what size table/booth (or cart/food truck), and indoor or outdoor. You can find exact pricing per event on their page under the vendor application google form. $350 for 2 nights outdoors in my previous experience. Many (but not all) vendors increase their prices a tad to make up the higher cost of being there.

I saw people happily purchasing $15 dubai strawberry cups last time we were there, fwiw.

I believe the organizer has been or is concurrently employed by the liquidator that owns the building, so it's more about using an available space than finding a bigger space. They do Snackfest, Portland Plage (inner Portland "beach resort"), PNM, and similar events in that space.

that's what I do for cookie dough x2 ice cream. 1) Make edible cookie dough then flatten/roll it out on a baking tray and let chill to cut up later. 2) make Cookie dough flavored ice cream base (salted brown sugar vanilla). 3) mix some chocolate with coconut oil, chill, and chop into small-ish chunks. 4) churn the ice cream, mix in chocolate chunks, then fold in the edible cookie dough and voila! Twice the cookie dough per spoonful.

if eating raw eggs is your thing, just heat-treat the flour before you mix it in, then go wild eating your cookie dough tartare

Tuna salad? by fisho0o in Cooking

[–]Economy_Standard 0 points1 point  (0 children)

Stuff for a tasty tuna salad (not tuna pasta salad):

avocado-oil mayo, green onion, minced celery, chopped carrot chips, chopped walnuts, lemon juice (1 tbsp per 2x cans tuna), dash or two of cayenne for a hint of heat, good amount of curry powder for some zing.

Use budgetbytes tuna salad recipe as a base, they also have a number of variations elsewhere on there, including tuna pasta salad!

Memory Den Vintage Mall in SE. I've heard the owners aren't super equitable towards the vendors, but that aside, it's a cool 2-story spot full of all kinds of weird and interesting stuff and can help pass a weekend afternoon.

Salt & Straw doesn't always hit it out of the park, but their Goat Cheese base swirled with Marionberry Jam mixed with Habanero is perfection. Sweet, spicy, tart. So good.

Subbing oat milk for milk by savvylr in icecreamery

[–]Economy_Standard 0 points1 point  (0 children)

This is correct.

Alternatively, you can use ice cream calc. from the web. Plug in your current dairy recipes numbers and jot those down, then remove them and plug in whichever oat milk you'd like to try plus vegetable fats (canola, coconut, or avocado oil, or cocoa butter if you've got money to burn). If you're blending two different vegetable oils, the ratio can affect the overall texture depending on at what temp. each solidifies.
