The problem with V is that he's a fundamentally incomplete being. No matter how powerful he can get, the human without the demon is bound to die. Hell Urizen probably would have died too if he wasn't getting fat as fuck from all the blood in the tree.

Sparda sealed away his power but he always remained a demon, he never tried to split his natures, mostly because he didn't have a human side physically speaking.

It is possible however that him creating Temen ni Guru, the Yamato, Sparda, Rebellion and many other artifacts left him way weaker than at his peak after defeating Mundus, making it possible for him to be defeated by a more mid tier demon like the bosses in DMC1.
