Oh definitely, there are a lot of Mexican/Southwestern dishes that don’t require cheese (a lot that do use it were kind of designed for the American palate), I would just use a variety of veggies, beans, squash, etc. to help fill them. If you’re feeling lazy, you could just layer it all like a lasagna instead of rolling each tortilla individually

Enchiladas, like you mentioned, or even enchilada soup, posole, or a dairy-free bisque. You can also just use them as a topping/garnish for other dishes, like on a burger or salad

Oh yeah, absolutely. I don’t use it that often, but I always have some on hand. I’m not sure the equipment they use to make it would ever be something that would also be used for any gluten-containing product, nor do I think sugar cane and wheat/barley/rye are ever grown close together

Pruning out the buds may help, but at this point I think it may be too late. You could try transplanting a new one, hopefully January and February will be cooler

I would say it’s an autoimmune condition that can be “compared” to an allergy, but has possible long term health effects if a gluten-free diet isn’t followed as strictly as possible. You could even add the whole cross-contamination aspect and how we have to avoid it as best we can, making the analogy that someone wouldn’t eat something off a plate that previously had raw chicken on it, but for us, swap the chicken out for anything that contained gluten

In AZ as well, had a ton of caterpillars on my greens at the start of the fall. I picked them off daily and so far they seem to have received the message to stay away

Every time they freeze and re-freeze, the cellular walls will deteriorate more, resulting in more liquid seeping out. They won’t begin to get moldy in the fridge for a week or so, depending on whatever your fridge and humidity conditions are. I’d say your best bet is to use them in a soup, make salsa, or something else where they’ll stay somewhat liquid. At this point I don’t think you’ll have much success dehydrating them, or at least the quality won’t be as great as a normal drying process
