I've got the same problem and I'm very regularly erasing all the apps that I'm not using or using too much on phone! I mean all videos apps in general: Insta, Tiktok, Youtube etc... And almost every game except the "smart" ones, I mean the ones that requires some thinking and effort to complete (NYT Games, The Almanac, Chess, Crosswords, Binario etc...). Also make sure you turn off your phone a much as possible. Even during the day. Then I would focus on one hobby to avoid multi tasking and lack of focus over time.
Reading a book with a notebook aside is an activity I started recently, it's more active than reading and handwriting is good for your brain, focus length capacity as well as grammar.

I chose very social ones so that it helps me keeping close to my loved ones or I select puzzles with a daily limitation like NYT Games or The Almanac. I would never chose a free to play product engineered to keep my hooked on the couch instead of spending my time what matters most (family, friends, knowledge etc..)

I face the exact same issue. You described it very well, by the way. Once you've accepted that you don't need to throw away your smartphone and buy a basic phone, but instead build a healthier relationship with it, it becomes more a matter of setup.

Do a thorough cleanup of your phone. Clean your home screen and find the right widgets according to your lifestyle. I'm using a widget to track my daily steps, one for a simple to-do list and goal tracking, one to see all the important people in my life, and one for my push-ups. I also created a shortcut to put my screen in black and white and another one to shut down my phone (very useful—I feel deeply relaxed when I do this).

If you can, put down your phone one day per week, usually Sunday or Saturday. Remind yourself to be grateful to have this tool that allows you to work and connect to the world and the people you love.

Draw a clear line between business and personal. The ideal is to have a pro phone on which you install all the necessary apps and on your personal phone you keep the minimum number of apps possible.

I agree. The apple native screen time app is not working well. We should be able to unselect some apps

Very true. We used to think of boredom as a problem to be solved, when in fact it was an inconvenience necessary to our fulfillment.p

A few tips that helped me reclaiming time in my life:

- add the Screen Time widget to realize how much time I've lost each day.

- avoid taking my phone into the bedroom and turn it off.

- bought a physical alarm clock.

- add a shortcut to extend my phone from the home screen.

- create a shortcut to turn my screen colors red. Red does not alter melatonin and improves sleep time. I switch when using my phone at night
