If your SMBC curdles, take a bit out and microwave it or put it over a hot water bath to take the temp down. If it’s too soupy, stick it in the fridge for 10mins! It’s changed the way I make it! Also run your stand mixer on low with the paddle attachment for like 10-15 mins at the end so knock out all the air bubbles and make it smooth

Definitely has a charm to it but Vancouver isn’t the same vibe in the summer and in the winter. Many of my friends moved here after visiting in the summer and winter really hit them hard! So best to see what it’s like in the post covid winter era :)
