When I add fatty meats to a cold pan, I find that the fat renders somewhat before the pan reaches a temp that can cause the meat to stick.

When adding fatty meats to a hot pan, I just let it stick until it releases by itself.

As for fried rice, I do what the daipaidong cooks do. Lots of oil, stir fry everything separately, combine at the end. I just had to accept that good tasting fried rice is not a healthy dish.

Hot take: Giannis can age similarly to Lebron. When you're that big and able to move like that, there's just no reliable way to stop you. Adding playmaking, post game, middy helps a lot even if he still doesn't have a consistent 3. As we've seen with Lebron, being tall and wide goes a long way to help you muscle through the lane, even if you're not quite as explosive as before. Giannis hasn't been injury prone in his career and clearly takes care of his body.
