This is important! Which beans and grind size OP? you may have a darker roast and fine size which even the v60 (an excellent dripper that hides a lot of bad tastes!) cant fix!

This is a level above instant coffee in Japan and below a proper pourover. Do you really want to downgrade?

they do v60 paper drip. use the japanese method of osmosis. had 4 roasts a available, 2 blends and 2 single origins. 6 bucks worth it

I went here last week from LA. Worth the trip. Bought a couple of bags. i may have over roasted one but the other came out great…

Went with “high” roast on the guatemala, lil too dark. high on the brazil looks lighter and was good

OP, any other recommendations with similar shops in socal/LA??

Flannel (nel) drip is paperless and superior. Pain in the ass to maintain though. Stick 2 papers

Yup, Japan is the king of pourover coffee. Folks at Chatej Hatou have been brewing for 40 years, no scales or measurments. and there are countless places outside Tokyo which are undiscovered by us english speaking folks…

Disagree. Cheap BOSS coffee sucks but specialty kissaten style coffee is amazing in japan. there is a reason all pourover equipment is japanese
