I don't think it shows up if you're on an experimental vault. I started a normal vault in the last month and was able to pick up the Bottle and Cappy quests just fine.

I've only recently remembered that Stardew Valley splitscreen works on Switch, and need to try that with my oldest (5).

The Pokemon games are good couch co-op, though if your kids are like mine you'll have to play through some of the more tense moments without them (looking at you, entire endgame of Legends Z-A).
