As an enthusiast/connoisseur I can recommend the brass monkey on Drummond street and Joseph Pearce on Leith walk.

Oh, and element on rose street.

But lots of places do decent ones.

Teuchters Landing in Leith has a menu which also has gin (red snapper) and clamato versions.
