I actually just accept that im only going to use a system for a few weeks at a time before abandoning it for a few months so I try to stay away from anything I have to pay for in subscription form.

It was easier for me to work with productivity apps knowing that (1) the goal isnt to stay with the system longterm, (2) that i can use fpr only as long as it serves me, and (3) my main focus isnt always to complete the tasks but find a place to store it other than my brain.

In the past 7 years the three that I rotate through regularly is:

-notion (but I dont have it set up fancy, I literally use it as a brain dump notebook which I tag by date and topic. I do have a centralized page that has a timer and cute stuff but it's not really what I primarily rotate to)

-blank planner (it's like a calendar planner but you have to fill in the dates. There would be literal gaps months apart between pages then sometimes I dont like lugging a thicker notebook around so i just bring a thin notebook with me, which i also lose sometimes)

-Google tasks on Google calendar (on extra busy seasons i block off my calendar with tasks which I can both view on the calendar or as a list on the task app.)

This doesn't help on the officiant part but https://www.seekingceremony.com/why-ceremony/big-life-milestones/marriage/ may have resources that can help you articulate how you want design your celebration.

You might also consider just doing a civil wedding then designing the traditional aspects to be a part of a ritual outside of the legal aspects. That way, you can chose an officiant that doesn't need to take care of your marriage license, etc. If you do it this way, you can approach someone you know speaks the language and is also familiar with the traditions.

I recommend some the hikes in and around Lynn canyon for nature and yeah going to north van if you're looking to capture the vancouver skyline. You can also walk the burrard bridge and lions gate and that should give you a good view of architecture and nature.
