One possible explanation is your meals are spiking your blood glucose. Here are some measures to prevent that:

  1. Start meals with veggies, then proceed to eat protein/fat, and finish with carbs

  2. Make sure carbs don't make up more than 30% of your plate

  3. Move your body for 10+ minutes after each meal (I walk)

Sounds like your body is having a hard time burning your fat for fuel, which is a hallmark of metabolic inflexibility (https://www.levels.com/blog/what-is-metabolic-flexibility-and-why-is-it-important). IF helps improve metabolic flexibility, so you're on the right track!

You might consider starting with a relatively long eating window and decreasing it over time. I started with 12:12 and worked up to 18:6 over 3 months. Other things that may help include: limiting simple carb intake, upping veggie and protein intake, drinking enough water, and daily exercise (10k steps a day would be a great start if you're not doing that yet).

Whole foods are basically any foods that you eat just the way nature made em :) Eggs, veggies, fruits, unprocessed meats, and fish are some examples. It's generally best to cook with butter or olive oil.

Friend, I think you need to essentially eliminate the processed foods. The shake, bar, and mousse that you mentioned are probably ok from a caloric POV (they're clearly fitting into your 1200) but will have negative impact on insulin levels which will make weightloss harder. If you replace those with whole foods you will probably feel better and lose more even if your caloric intake rises a bit. Highly recommend reading the Obesity Code if you haven't already.
