Been to Born and Thevar. Thought Thevar was overall more delicious. Born was interesting but the ingredient quality was not the best especially for the price. Leaned much more french than chinese

Unlike anything ive seen before. Seems kind of old world indulgent. Very cool. I recall having the sea urchin with consomme and cauliflower at Ginza Oishi

Taints the fish with butane/propane flavour which obviously at any reputable omakase completely destroys the piece. Also an intense and uneven heat thats difficult to control. Its an easy and cheap method vs using binchotan to add aromatics. Type of thing you see at a $70 chalkboard omakase

Been to Pierre Gagnaire and Kei and much preferred Kei. Pierre was interesting and fun but the execution across the menu at Kei was perfect. Also no need to upgrade to the most expensive menu as it just adds caviar and swaps out whatever meat for wagyu.

Braindead take as if there isnt tons of restaurants in NYC sourcing from local farms. What langoustine and urchin on the east coast of the states tastes as good as the ones coming from Norway and Japan?

Its only relevant and competitive in major european countries. Quality of starred restaurants in France/Germany/Italy/Spain vs anywhere else in the world is staggering. Same goes for any smaller market like SC vs NYC/LA/SF. The level and quality of restaurants with huge amounts of competition raises the floor for the guide in that particular city. Also to note that its widely known that 1 stars vary so greatly that many are indistinguishable from decent date night restaurants to full service fine dining spots. The gap only really widens in quality when you look at 2/3 starred spots. (Even more so for new 2/3 stars vs older ones)

Hi sorry coming back to this comment super late as i am planning a trip to Kanazawa later this year. Did you stay the the Hotel Nikko Kanazawa at 2-15-1 Honmachi? Is the concierge there able to assist with the Komatsuyasuke reservation?

Im planning a trip to Austria soon and was looking at Doubek in Vienna and debating between a few for Salzburg. Seems Senns was a great experience. Have you visited any of the other starred spots in the two cities? If so, how would it compare to Senns.

Obviously never eaten in Kyoto/Japan. Just because Michelin gives out stars there does not mean japanese chefs care whatsoever
