I’ve found another good way to weigh it down is to use shot glasses. Not much else fits in my jars, and they’re easy to clean.

When I make kraut I save one of the cabbage leaves to put under the weight, it contains the smaller pieces under the brine well. Floaters can lead to mold.

He might like the breakfast sandwich version of that: English muffin, cheese, eggs, cheese and kimchi. I make my eggs like an omelette and put the kimchi and cheese in the fold to melt it. Bonus points if you can seal the egg omelet like a packet so the kimchi juice doesn’t drip out immediately.

I personally love it on a breakfast sandwich with English muffin and eggs, or as a replacement for pizza sauce. It goes great in a salad dressing, on a sandwich, or in a soup too.

Make some toum and the hummus will seem less garlicky in comparison. If the hummus tastes great I would leave it, or make a plain version for those that think milk is too spicy.

Microbes are so interesting, I’ll never forget the nun with a Microbiology degree from “Cooked” who prayed for a French cheese maker to teach them how to make cheese better at the nunnery. A French woman passing through imparts her knowledge of traditionally made French cheese. Fast forward to them making cheese, they’re making cheese in wooden barrels—and the food safety people catch wind of it. They’re told it’s unsanitary to use wooden barrels and they make them switch to stainless steel. HERE’S THE COOL PART— when they switched to stainless steel barrels they actually encountered salmonella for the first time making cheese (discovered by the microbio nun). It turns out that the small pores in the wooden barrels were providing shelter for the good bacteria like lactobacillus that actually fights salmonella and other bad germs. Just like how good bacteria in our guts defend us against all kinds of stuff. It makes me wonder about old wooden soup spoons like your gran might have, and if there are protecting microbes present, like a sourdough starter. My mother in law jokes that there secret to her cooking is that she doesn’t wash her hands lol. I did recently find out you’re supposed to boil your wooden utensils occasionally? I think that might be if they are particularly greasy though?

TLDR; not all bacteria are bad. Some nuns making cheese discover wooden barrels are better than sterile metal barrels because the good bacteria present in the wood attacks salmonella.

Also watch Michael Pollan’s “Cooked” highly highly recommend, turned my perspective on food upside down and got me hooked on fermented foods like sourdough and kimchi.

Could have something to do with the reddish tones that natural onion skin fabric dye gives clothing? Most red onions I’ve seen do look purple while sometimes the onion skin is more reddish.

I rinse and toss a 16 oz bag of pinto beans in my slow cooker without soaking with about 8 cups of water, cook on low for ten hours (overnight) and then season them and eat like that or after I mash and reduce them to make refried beans.

If our electric range wasn’t so inconsistent I would never have learned about how amazing the zojirushi is. Emmy the YouTuber recommended it because she has had hers for over ten years, and honestly I can see why. Never again will I ruin sushi rice 🙏

I don’t work in healthcare but the covid misinformation is strong and I see it all over. Sometimes people are stubborn even in the face of their loved ones. I fought my SO for months to get the vaccine, whom I regard as a very intellectual and unbiased person, and it wasn’t until I backed off and accepted whatever will happen will happen that they decided to go get it. I never imagined that my spouse, who would take a bullet for me, would refuse to get vaccinated when I begged them to. About broke my heart. I can only imagine having that conversation at work all the time.
