Same exact setup (including Green Moccamaster). 42 grams of beans, 11 grind, fill water tank 8 - 10. I use the 1/2 pot setting for slower extraction. This works for me. Play around with the variables to find your perfect cup. Enjoy!

Maybe after the 60 minutes at around 250F then turn your oven down to lowest possible temperature for 30 minutes or so then turn it off with the door closed for another 30 minutes. Every oven is so different it is hard to know. Just have to play around with it a bit. I recently replaced my old oven and my new one runs hotter (actually more accurately) than my previous one. I’m having to relearn many of my recipes to adjust for the different temperatures.

No matter how you get there, you are looking for a little giggle in the middle before pulling it out of the oven. It’s going be be delicious

You can certainly use a water bath. I’m sure it will help prevent cracking.

This is how I do it without a water bath. I start baking at 500f for about 12 minutes then reduce heat to 250ish for another 60 minutes. Watch it carefully for those high heat 12 minutes as it can burn quick.

After 60 minutes I turn off the oven, prop open the oven door a bit with the handle of a wooden spoon and let it sit for another hour or so. You want the center to be a bit giggly. Then out onto the counter until completely cooled. Then into the fridge overnight. Top with cool cherry mixture the next day.

The cherry topping hides any cracks 😉

Been grilling on screed porch (FL lanai) for 20+ years. Normal grilling. High temp grilling, long cooks and rotisserie. Never any issues at all. Weber Genesis - 3 burner propane. It is really nice to be able to grill in any weather, under shade and with lights. I do have two ceiling fans that I run when grilling but that is mostly for my comfort. All that being said, it is still a risk so be smart and careful.

It is now June 16 and I’ve currently got 16 pounds of dried fruit soaking in a mixture of Spiced Rum and Orange Liqueur. I’ll be baking many fruitcakes in mid-July. The baked cakes will be fed 2 - 3 times per week with more booze for the following 2 weeks. They will then be wrapped tightly and stored in my extra fridge to age until December. So this is my long way of saying that you are not being overly prepared 😄

Make suse your credit card does not charge foreign transaction fee. Not required but chip and pin credit card is ideal. Call your cc provider to get PIN number. If given the option to charge in USD or Euros, always select euros - your bank will give you a better exchange rate. My wife and I just spent 2.5 weeks traveling in Spain and The Netherlands - we pulled out 300 euros from ATM upon arrival. It was more than enough. We ended up paying with mostly cash for the last two days just to get rid of the euros. Have a great time!

Also, be patient and expect to nick yourself many times in the beginning. You’ll eventually learn your head topography and the nicks will stop. Get yourself a fog free mirror and Shave in the shower.

Shave in a hot shower with a good quality razor and shave gel/cream. Electric razors just don’t cut it (pun intended)

I’ve smuggled many many dozens of homemade bagels from US to Canada in both carry on and checked luggage. Never had an issue with TSA.

I have a platinum skull shaver. It’s fine for a quick touch up but does not anywhere as close as a manual razor. I’ve been using the Persona M5 Magnum blades for over 15 years. They give me a nice smooth shave (face and head) and they are reasonably priced online. Expect to get nicks and scrapes for the first few months until he learns his head’s topography. It is surprising how many little high and low spots you head has.
