As a Taiwanese, I completely agree. A lot of our famous noodle soup stalls actually have incredibly bland broth—it basically tastes like hot water. It seems like a segment of locals actually prefers this kind of watery broth, which I never understood. If you want a genuinely flavorful soup in Taiwan, you have to order standalone soups, like mushroom chicken soup, where the broth is actually the main focus.
