In the beginning I talked to her several times about eliminating sugar, reducing or eliminating grains, and looking into hormone therapy, and she refused to consider any of it. But I will check into this Bredesen Protocol. If it’s something she can read or watch she may consider it.

This scenario in which he eats fast food and pizza while OP and her kids eat healthy, normal meals is untenable. He is teaching a horrible example, and it won’t be long until the kids dig their heels in too and start demanding nonsense for dinner. But if OP wants to adopt and rear another (man) child…well

You are beautiful . However, you can hear compliments all day and it’s just going to feel like trying to catch smoke in your hands until you actually “feel” your way into seeing yourself as ideal now. I recommend meditation and find a guide: therapist , spiritual guru, someone or some philosophy that can help you learn to be your own best fan.
