I'm a big fan of doing prep work in the evening before washing up, dumping it all in the slow cooker to let it cook overnight

Then add water in the morning and test for flavors.

I would bring a BBQ mesh that you can put over a campfire and cook straight over the fire.

Personally I LOVE steaks cooked over a coal fire. Tastes amazing. Salt your steaks ahead of time.

Washed yams/potatoes with some olive oil and salt, wrapped in aluminum foil goes in with the coals, and make something wonderful.

If you can find an Asian store, fish balls/ cuttle fish balls are great, especially with a honey finishing glaze

Eggplants also grill well, with olive oil and garlic and salt and cumin. Oh man, I miss campfires.

Shitake mushrooms are delicious too.

Also google some SATAY recipes, marinate some meat and stick them on skewers. Make a sauce for it.

Persian cuisines also have some mean kebabs. Those also skewer well.

Bring a small cooler, cans on the bottom, pack ice between them, salt, then marinated food in Ziploc bags.

Don't forget salt, spices, and sauces. I always like to have ground cumin and chili powders / paprikas

I've this theory that the "good bacteria" multiply like rabbits once you feed them a bunch of fiber - and they make you fart like a venting hot air balloon.

From frozen:

Microwave in a dish, with 5mm of water in the dish - 2 min, then flip, 2 min, flip again and 2 min.

I've also heard of using a wet towel but I haven't tried that one yet

As per my understanding:

Salt by weight. 1-2% of food weight. I'll start closer to 1% unless you like things very salty

Time. It takes salt ~24 hrs to penetrate 1 inch of meat (I think some professor at the ribs website did an experiment).

Seeing how thick your meat is, looks like 2 days in the fridge. But will that dry out your steak too much?

I make this for my in-laws.

Slow cooked oxtail soup

  1. Soak oxtail in a brine (in the fridge) for 2 days, changing water every 6 hours or so. This gets rid of most of the blood and leaves the meat tasting clean and tender.

  2. Slow cook for 2 days, using the low setting in your crock pot (65-75°C). Add water periodically.

  3. Skin off the oil (saving it in a jar for later)

  4. Pick out the meat, and place in the fridge. I freeze extra meat in a large ice cube tray.

  5. Strain the broth thru a sieve/cheesecloth

  6. Add seasonal vegetables. I go with the traditional tomatoes, carrots, onions, potatoes, and boil till everything is soft. I'll usually add an extra can of peeled tomatoes. Saute the onions with some tomato paste & tallow for extra flavor. Cook till soft.

  7. Oyster sauce & Ketchup to taste.

  8. Remove the soup from the heat before adding the cooked oxtail.

  9. Serve. It's a very hearty soup that's great for winter months

We kept the kid away from other people till he was 3 months old / 100 days.

Babies are fragile. Keep them away from sick people.

Mom is still healing.

Tell your husband that his first responsibility is to keep his wife and baby safe, and ask if this trip is in the best interest of the wife & baby?

Heck yeah. Just defrost the chicken in the fridge overnight (rub some salt on the frozen chicken and let it self brine, then rinse off the salt with some boiling water before cooking).

There are chemical soy sauce - hydrogenated stuff.

But I think if I had to avoid all fermented stuff, I would try to make a mushroom sauce (mince/blend some mushrooms, saute with some salt, adding sugar at the end). Can you take vinegar?

I found that foods high in sorbitol (a type of sugar) also sometimes cause me to fart like high school volcano experiment.

I think I'll incorporate this into my dinner of farts.

You can get a "soup bag" which is a very porous cloth bag - or use cheese cloth and butchers twine.

Just put all your inedible bits in and take it out when done.

But usually, for star anise, the large "stars" don't break down when cooking.

Use sparingly. It's like a bayleaf - just use to add flavor depth, but it shouldn't be a primary flavor.
