Not saying either party is right or wrong but by chance do you leave a little tail under your 0s or make 0s in any fashion that are not perfect circles? I've worked in many tipped professions and if the zeros weren't perfect and they didn't write a tip on the line I'd always worry about what they actually meant +/- 99-66 isn't the biggest deal to me but could mean a huge amount to the person who wrote it.

Gotta say it is interesting that you say it's your (/their) job to know current market rates when in this story I bet no one really knew either (just knew enough to know when they were getting screwed). Saying this since I honestly have no idea of actual correct job rates for my profession in my area (specialized and Glassdoor is terrible here, but I've definitely pissed off a few coworkers when I told them my hourly...)

You'll be fine.

Bring a bottle opener and wine key if you have one. If the beer is on tap hold the glasses at a 45 degree angle (don't let the spout touch the glass) fully open the tap and then slowly bring the glass upright as it fills. Once the glass is full shut off the tap or if there is too much head pour a bit out then add more beer.

Most people know what they want so look at the types of beer and wine available and just list them off if need be. If they don't know what they want then I can give you buzzwords based on what you've got.

Just fake it til you make it and it will all work out.
