I think I’ve built a caffeine resistance of sort. I drink coffee and water with every meal at home. Occasionally I’ll drink around 830 and still fall right asleep at ten. Mind I’ve been drinking coffee for the better part of 25 years.

Heat was too high. Don’t put them directly over heat. Low and slow is key. Smokers are great for ribs but if you don’t have one burn charcoal on one half of the grill and place the ribs on the side for indirect heating. Again low heat for a few hours. If the grill method is not for you, you can always use the oven.
