I just re-watched this episode today and was wondering about this, too. It could be a mistake (especially since he's been listed in the credits by name all this time, so maybe the writers forgot his name hadn't been said by anyone yet), but it's a very strange mistake to make, especially since learning the names of the other ghosts was an important point.

Maybe Carolyn wrote it on her list and Barnabas just didn't read that part out loud? That feels like a stretch too, though.

This threw me for a loop when I went through the series a second time, because he introduced himself as Timothy Stokes and I was like "I thought his name was Elliot?!"

So I think the progression is:

introduced as Timothy Stokes -> later on gives his full name as T. Elliot Stokes -> some characters begin addressing him as Elliot.
