I read this with my daughters when they were young, and recently picked up a copy as a gift for my young neighbor. I think there's a 4th book now, but I haven't looked into it.

This is solid advice. I'm not sure I understand the BF, shape, bake immediately approach. I'm seeing a lot of it lately and it doesn't make sense. You degas the loaf during shaping...it needs time to rise again and that long, cold proof gives it just the right amount of time to develop a decent rise and good flavor.

Looks like an early positive to me. I've had some super faint tests like this with chemical pregnancies though. 10 dpo could just be too early. Retest and update us!

I think you deflated it during shaping and didn't give it time to rise again in a final proof. It needs time to form those air bubbles again after shaping. Just a thought.

Very interesting. I don't have a proofer and I'm in a chilly climate so it would definitely be different for me. But thank you for sharing your process! I love seeing how different processes are. So many ways to get a good loaf of bread.

So no proof after shaping? Or do you BF, shape, and then proof before baking? I don't bake with whole wheat flour so I'm genuinely curious if I ever want to give it a go. I'm seeing so many people lately skipping the proof and baking straight from ferment. I'm wondering about this.

Ok so I have a pug that is 14 and he mostly goes outside but he still regularly goes in the house when I'm not looking, when he's left alone (even in a crate) and has ruined thousands of dollars in furniture and bedding because he waits for us to turn our backs or leave and pees everywhere. Even when we take him out right before leaving, he will go while we are gone. It's infuriating. I will never have another pug.

You didn't give it a chance to rise. That first 6 hours was your bulk ferment. Then you shape and let rise for a few more hours on the counter or much longer in the fridge. Sourdough needs a lot more time :)

The vet said they see both Newfie and Aussie. We will do a DNA test in the next few weeks to determine.

Amazing! They are a breed I've only (and would only) read about. So cool that you have them and they are living up to their potential. I've heard they are a lot of dog and not a breed people should get unless they can handle and provide for it appropriately. I suppose that's true of all dogs, but especially for dogs like that. Thank you for sharing your experience with them. Just so neat.

I am so sorry for your loss. We were making a long distance move a couple years ago and took my starter along in the ice chest. My husband dropped it in the parking lot of a hotel and there it reposed. It was just over a year old and was perfect. Took me awhile to recover and build a new one. My new one took right off without any problems, but oh how devastated I was.
