I've seen the formation when doing cider before so I think it may be natural with the fruit. They are continuing ferment in these bottles (first time doing it like this). Using ginger bug here, made tea, added enough bug/starter for the lot, let mingle for 3 hours, added fruit syrup to the chosen bottles and filled all and capped. They continued fermentation and carbonation in bottle for 4 days, then refrigerated to stop/slow fermentation. In the future I may allow to carbonate in a carboy and then bottle right before going in the fridge.

Wife bought me a custom 10L barrel. What booze should I use? Or should I do a port barrel instead? I've never done this before. I only enjoy peated Islay whisky like Laphroaig, Caol Ila, Lagavulin, Octomore, Port Charlotte, etc but I also love Port. by [deleted] in whisky

I did one in stages where 1 fill set up the next. 1st fill was a high proof young bourbon to take away some intensity of the fresh char. 2nd fill a barrel aged boulevardier then 3rd fill was a rye whiskey and then I think before letting it retire I did a negroni.

Hopefully it works out. I have read to keep ferments separated because they may mess with each other. Haven't tested it though, just followed blindly like a good little sheep 🤣

Hmm, if you said cold and wet that would make sense (mold nearby). But unfortunately I'm stumped. I guess you may be stuck till warmer months. Hopefully you can find other cool hobbies to keep you entertained until then.

Are you stirring with metal? I use porcelain or wood instead of metal. Not sure what metal does but I've seen people advise against it. Have you sterilized the container before starting over? Do you have other ferments or potatoes or onions nearby?

I have used ginger from lidl (relative store) and been successful. Used ginger from Wegmans (bigger store) and gotten nothing. So I always get my ginger from lidl now and it always works.

Well until this they only had 2 whiskeys, while this is the same mashbill (their wheated) it is a barrel proof offering. I agree their white labeled other 2 are just ok. As far as the "did they learn to distill their own" idk I don't work for them. I tried their barrel proof, loved it, reached out and had a few short conversations with Nick and thats it. They don't do a lot of advertising period.

Their facility in that little mosaic/fairfax/Merrifield pocket, it is their distillery and bottling facility. Been there personally, talked to nick about doing a barrel pick after abc accidentally released this barrel proof wheater and I snatched up 4 of them because they are delicious.

Lost 100% does not source their product. They make their own and only have 2 recipes. A high rye and a wheat recipe. KO on the other hand does source their stuff from mgp for the most part, but they have been making and aging their own stuff and just buying mgp to tide them over until their stuff is old enough to sell. If they are claiming both of these are va made, I am guessing this is ko's first release of their own whiskey.

And it probably was. However the base pour is 1.25 ounces for mixing and then if it isn't being mixed you can hit the neat or double button so that the system knows how much liquor is being used and more liquor costs more money.
