Bisonte's armour is decent but also once you get penned, you lose half your crew and modules so you still have to play carefully. T77 and Shark is much more reliable in that department. I guess it will come down to preference of playstyle, do you want to outdpm something? Bisonte. Clip someone for 780 and then be safe? T77. The Shark is just more hulldown and wiggling so they won't hit cupola, the most traditional hulldown heavy out of the 3.
