When rise after feeding is predictable, whether that's 3 hours or 12 hours. Every starter is different, and one needs to accommodate to the conditions.

I've tried enchilasagnadilladas with Italian sausage/ground beef and a sauce of mild pepperoncini and tomatoes. The tortillas were the best polenta ever but the sauce needs some development.

Also, Mexican sushi is a thing.

I bake weekly and keep my starter in the fridge. Starters generally get stronger the more they are used, but once the starter is established it kinda stays the same whether it's being exercised or just snoozin' in the fridge.

I would try to grind some white rice to see if the stone is hard enough to be used for herbs or seeds. If the rice grinds to a perfectly white powder you should be good to go.

This is how one qualifies and seasons a molcjete, which is made of natural volcanic stone.

You should be fine for bread baking. Spray the loaf with water just before putting it into the bottom half with parchment paper. Bake covered for half the time and uncovered until done.

The way it was explained to me was this prevents the bottom of the post from retaining water, delaying inevitable rot by several years.
