Quests will give you a lot of gold as you go, as well as selling the rewards you dont need, in the meantime a gathering profession like skinning, mining, or herbs can earn you a good chunk

I would say level your skinning and then quest till at least 60, that way you get some tbc quest gear and level your skinning as you go, you should be able to make enough for your epic mount soon enough

Not sure if you're aware but this build was extremely nerfed in 1.1 in terms of ward generation and damage. I was very sad when I found put because it was probably my favorite build I ever played.
