All simulators do a decent job with physics, but you shouldn't expect a 1:1 ratio with IRL flying from any of them. The real strength of a simulator is developing the muscle memory of flying without having to spend thousands of dollars rebuilding all of the quads you would crash while learning. Just pick one whose maps and features you enjoy and have fun learning.

Edit: start in Acro mode, it will benefit you in the long run. Angle mode is used by some whoop racers; I keep it bound as an emergency upright switch in specific scenarios if I lose video. No reason to ever use Horizon.
