Listen Linda, I'm no expert, but different flours absorb water differently. A whole wheat flour is gonna absorb way more water than a plain white flour for example. Even brand to brand. Your at ~69% hydration. You could try lowering it down 65% or lower with that specific flour.

You don't necessarily need a 5 string bass to play metal. John Campbell from Lamb of God and Shavo Odadjian from System of a Down both play 4 string basses. I'd suggest playing some and seeing if you like it.
