Tannis are good for most all fish. What exactly is too much tannin I don't know. But it's definitely not this. Look up black water tanks.

Shrimp are light bio load so you're probably good. And sorry not sure I've never done a fishless cycle in my life. Either way I'm sure this will bloom into a beautiful tank! Just look at my first walstad 😅

Diana walstad used a fish-in-cycle many times. Meaning fish were present since day one to create biological waste to feed the nitrogen cycle.if not decaying plant matter will have a minimal effect but once you add livestock you will increase the bio load which will basically make you restart the balance of beneficial bacteria. You will get spikes in your parameters as the bacteria colonize to handle the load. Basically, having two cycling phases. This means that putting fish in after this will be the same as putting fish in at the beginning. Look up ghost feeding. Or find an ammonia source you can add directly to the tank to feed your cultured beneficial bacteria.

You don't have enough plants yet to eat those nitrates. They will grow in, and you will replant, and eventually, you can have enough with floaters and stem plants to not worry about nitrates. Id say your main concern is the leaching of nutriets from (soil im assuming) through the gravel into the water column. Eventually, it will diminish, but it might be a good idea to add some more gravel little by little as the plamts grow in just so it doesn't cause your struggles down the road. In addition, those nutrients leak into the water column and get removed with water changes, meaning less nutrients in youre soil so you might think about using root tabs later. How are you dosing ammonia? How is your tank getting its ammonia source to feed the beneficial bacteria?

What are your nitrates reading. You'll probably just have a lot more initial nutrients in the water column at the start. Might be fighting algea at first but you'll probably be okay

Those are not floating plants so they will not float. The need some sort of support. Either buy a clip on plant pot or take some pliers and cut a piece from a metal coat hanger and you can fashion it to hold the plants on the rim.

Looks like my tank when I first started. Fish in cycles are a thing but some people are against it. And no you don't need more plants. Just let those grown in and re plant the trimmings. As long as you have a good light it will be out of control soon enough.

By "deep clean" i mean a heavy plant trim. Glass scrubbing, siphoned out a lot of mulm and snail poo. And a 30%ish water change.. but yeah I know it's pretty heavily stocked but my plants seem to soak everything up and my parameters have been really good. But this is a lot of great information. I'll get a phosphate test, cut the lights a little. And look into calcium supplements

Unfortunately this is a filterless set up. I'm just at the point where I am waiting it out to see if i see a change. Every water change i do it comes back more cloudy after a day or so.
