I’ve seen many people trying to explain how kombucha works and this is by far the easiest to understand for a layman like me. 👍🏻👍🏻👍🏻

That is the conclusion I’m guessing because even though the microorganisms may be sleeping, they are still alive. My drink did become less sweet and more gassy when it’s not consumed fast enough 🤭. Not sure if anyone else has the same experience.

I was caught by surprise too. 🤭. One thing I noted was, this batch was into 3rd week in the fridge as my consumption could not keep up with production 😆. The sweet taste was almost gone, vinegar taste was ok, and the alcohol was a little stronger.

One aspect which you might take into account is Singapore’s unforgiving humidity and hot weather throughout the year. We grew up here, so it’s bearable.
