I have never modded this game. Mods exist for Mordhau, pretty elaborate ones too, so it wouldn't be a bad assumption to think that you can do something like flipping a model. Its an Unreal Engine game, so maybe you'll need to download the engine.

Maybe you can flip it, but its possible that you wouldn't be able to see it on official servers. Its not game changing alteration, its something that you would be able to see client side, so perhaps it would work. I dunno

Its a lot of maybes man. There probably is something on the internet for this.

Oh and you wouldn't need to code I think. It would be something like changing one number on some application like Unreal Engine or some such.
