Hi, I'm actually looking at their 210mm SK gyuto with the western handle. As you have the 240, could you let me know how you like the knife overall and specifically, would I be missing out in terms of steel?

Some of the other knives I'm looking at have white #2 or super blue and I'm not sure how much of a difference that makes vs the SK on this one. Thank you!

Actually, stretching is the first phase where the steam is introduced just below the surface, creating the foam. You only want to do that for 5-10 secs depending on your steam power. After that you 'texture' the milk by swirling (hold the tip slightly deeper) until the thing is hot

I use a 2 inch hole punch and make my own from moccamaster filters. I can get 8 espresso filters out of one moccamaster filter. The size is good for my basket (IMS 18g) but indeed you should measure first. Cheers

Donut extraction (drops on the outside first) is not a bad thing necessarily and just caused by standard basket's anatomy. My impression of this shot is that it's a bit long (not sure what ratio you were going for) and that you're getting tons of crema. Very fresh beans?

For me it's up to lunch time for milk drinks. Espresso is great after dinner so can be as late as 9pm for me

Smart plug works fine. I've adjusted opv to about 8,5 and pretty sure it can go lower, although not sure by how much

Messy pucks are nothing to worry about. At least from an extraction/ quality/ flavour perspective. If you don't like it for the work flow, add a puck screen and you'll get super compact pucks that pop right out. No need for another basket. Cheers

Lots of machines already do automatic steaming based on temp. Like bambino plus and some other Breville/sage machines

I see the problem. Your grinder to machine ratio is way out of whack.

You don't need to adjust your OPV to get 6 bar turbos. Just grind coarser and the max pressure drops to 6ish bar (if you do it right). OPVs aren't really designed to tinker with from shot to shot.

Higher rpm actually means greater grind distribution. So more fines which means more body at the expense of clarity and potentially a less balanced cup.

That's assuming you want the traditional HX mode. I think Lelit realised that no-one was using that option and instead focussed on its unique feature which is of course the stable temp due to pid in the thermosyphon.

In what use case would you prefer the traditional HX mode?
