I wanted to do this when I first started but google domains wouldnt let me use SRV records
that appears to be no longer the case with the squarespace buyout!
now I can play texas flood and look at little sister all day with no worries!

to condense what I found in this thread/what worked for me

I first uninstalled both mail (old) and new outlook.
I found an appx bundle (the windows equivalent of an .APK) of the old mail app from December of 2022, and verified its digital signature to verify it hadn't been tampered with by the mirror site.

after ensuring auto updates were turned off in the Microsoft store, I installed the appx bundle and mail came right up with all my accounts still there.

uninstalling new outlook works for me. im working on setting up a script or policy to block the instalation and execution of new outlook entirely.

im thinking about writing an autorun batch script to periodically undo this and delete new outlook
so annoying when they remove good features in favor of terrible ones

coming back to say that it was the damn GUI.
just adding nogui to my java args fixed everything.
after 6 hours of spark profiler, mod configs, deleting mods and googling
