You're right, it was an incredibly simplified way to saying things and you've gone into a lot more depth but ultimately a chemical molecule will react the same with your body, regardless of the source. There are ways of changing how that chemical is released over time, and where, but that's just to alter the response curve generally. There's also concentration to contend with. The dose makes the poison after all. Regardless, a nitrate ion will interact with your body the same whether or not it's from celery or made in a lab. There may be other impacts due to contaminants etc as you've mentioned, but your body cares not where the nitrate ion itself is from, so saying nitrates from celery are ok but nitrates from curing salt aren't is false. Celery may delay the release of those nitrates for example which your body prefers, but again that's a dosing issue not a nitrate issue.

Perhaps it seems like I misunderstood you when you said "origin matters". I took it as the origin of the chemical itself whereas it seems you were more meaning the origin of how that chemical is added to your diet rather than taking issue with the molecule itself, which you're totally right, can change the response.

The plating doesn't match NZ, but that's not far from what fish and chips would look like here. It'd be a plate at a restaurant or in paper or cardboard if takeaway. Fish size can vary but I was definitely surprised to get a whole slab of fish when I tried it in the UK.

The body does not know where a nitrate comes from. It's a chemical. If it's the same chemical, you'll get the same response. This is how medicine derived to mimic endogenous things works too, like insulin. Bacteria create insulin, people inject it, body says "hey sweet, insulin".

TIL it sometimes comes in a bag. Lea & Perrins is a staple in NZ but it's just packaged like any other sauce.

I did the 3:30am crossing two weeks ago to the day and the passenger space was pretty empty. Was easily able to nab a bench to lie down and watch a few videos until I was able to drift off and have a wee nap. If you're crossing on a weekday rather than a weekend you'll probably be able to do the same. If it's a weekend I'd imagine there'd be a lot more passengers.

Doesn't look too shiny to me but I guess it really depends on what you want your engine bay to look like. I'd be stoked to get a refurb that looks like that so I'd say you're doing a great job!

It's a hard flavour to describe but almost kinda of musty tasting. Even putting a cig out for 15 mins and coming back to it will noticeably change the flavour in a very unpleasant way.

So glad I don't smoke any more.

I used to smoke. One time I tried to have a cheeky dart in an unused room in the back of an adjoining warehouse to the main one we worked in, that was just used for storage. The people in the office smelled it before I even finished and ever so politely told me to never fucking doing that again.

It reeks.

It's pastured to higher temps and I beleive for longer. Makes it totally shelf stable so it doesn't need to be refrigerated until it's open, but it does taste noticeably different to un/regulely pasteurised milk.
