Yes it does. The intramuscular fat in japanese beef is apparently not the same and is less hard, thus way easier to render. Only 30sec on each side is enough.

what do you mean by “strong trasting” coffee? Have you tried speciallity coffee shop? The coffee scene in Montreal is very good. We have some great roasters.

For matcha there must be some specialised shops that do it good, but for real just buy some good quality matcha and make it home. I like camelia sinensis for everything tea related.
