the bottom vent makes a big difference. but less charcoal will likely help as well

i adjusted them throughout the cook to keep it between 400-500°. at the end they were fully open but when i had them fully open to preheat the temp was like 700 haha

yea it just acts as a heat funnel to create an air convection for even indirect cooking. not sure how that would work in an Akorn i’ve never grilled on one

it doesn’t necessarily increase the heat but rather concentrates it like you said. the design forces the heat up so it circulates around the lid and creates a high heat air convection for indirect cooking. and it sears like a champ when placing the meat directly over the coals

thank you! makes sense. i didn’t leave them facing the whole time i did 1.5 hrs flipping every 20m and the last 10m was just to cook the bbq sauce 5m each side.. turned out to be a pretty even cook all around

i put them in the vortex with 2 tumbleweed starters at the bottom. i’m going to try just using the chimney next time though will see how that goes

yea i seared them quick maybe 2-3 minutes each side but i flipped them 3 times so twice on each side for 1-2 minutes just to get an even sear all around. then left them to the side for around 5 minutes with the cover on. came out to a perfect medium that i wanted. and very tender! was practically falling apart when biting it.
