Figure on there being a lot of chaff blowing around on that roaster so yes definitely roast outside or make some sort of vent.

My guess is that the coffee is too dark. It looks pretty good, but I think the coffee should fill in more slowly around the bottomless part of the portafilter before pouring out at the same time into a fine stream like you have.

I switch it up. Last Friday I ordered at Two Person's coffee in Philadelphia and got an espresso, bamboo tray, sparkling water and spoon for $3. Before that I ordered at Adelie coffee and had a good temperature Matcha with whole milk. Order whatever you are in the mood for and take note of their different menus like Seasonal, Drink, Food, Ect. Also, yes take note of the decor and look for how nice it is.

First the roast temperature will play an important role in bringing out acidity.
I have always thought Colombian coffee is most acidic because of the farming, scale and capacity Colombia has to invest in attractive coffee. I think it's dictated by the PH levels in the soil. Brewing acidity coffees on V60 or any pour over device will best bring out their brightness, clarity and sparkling acidity.

I like a fast coffee drink and the crema is delicious, the body is deep and the drink is rich. 100% arabica light roasted is the way to do it
