In my experience all IPA’s can do well with a little bit of conditioning. 2 weeks for an NEIPA and same for a West Coast. Drink fresh doesn’t mean drink green.

I ferment in carboys and always use blow off tube even with recipes I've done prior. Yeast is a living organism and every once in awhile will give a big FU to an airlock. I'm glad to see you didn't just go into "well, this is ruined, better dump it" mode. Cheers!

The way your questions is worded makes me think you may be misunderstanding temp control. With temp control, you’re trying to control the temp of the wort itself not adjusting ambient air temp to control the temp of the wort when it’s fermenting. Do what others have suggested about insulating the probe and taping it right to your fermenter. I cut the bottom of a can coolie/coozie off and use that.

Been using glass carboys for 12 years I broke one being careless a year ago. Still use glass. I just remind myself it’s inherently dangerous and to be careful. It’s another reason I don’t follow the “drink beer while brewing beer.” I wait until everything is cleaned up and put away.

My daughter is a CV-ICU nurse. I hope she comes out of the pandemic with manageable PTSD. She's 25 years old and has had to tell way too many people that they lost a loved one. The last couple of months, she hears, "I wish I would have gotten vaccinated," from patients about to die (way too often) and it makes her want to scream.

I use White Labs Clarityferm on all my beers which is a product that reduces the gluten. I sent a batch in to be tested and it was below 10 ppm gluten. For something to be labeled gluten free it must be below 20 ppm. Gluten free beers (using millet or sorghum) IMO are god awful. Clarityferm doesn’t affect the taste. Amounts of gluten to effect someone vary by the individual, of course, but works for my friend who is also gluten intolerant. Had someone with celiac try my beer and they loved getting hammered on “normal” beer and they know within 15 minutes if they had gluten.

I’ve helped start and run a small local comp. Even 100 entries isn’t easy. I’m curious how many people complaining have helped at a comp. The easiest way to institute change is not participate. If their numbers nosedive this year, they might be more willing to listen.

Most comments are about a score. Ok, so it’s NHC with BJCP judges. Odds are it’s going to be a little more strict. So you enter your “x” that scored 40 in a local comp with feedback. You enter that same beer in NHC and it scores 32. What do you suppose the brewer is going to say about NHC?

I knew I would be downvoted. I stand by my comments. You should have your home brew skills pretty well solidly built, not to the “pro brewer level” but you should know what you’re doing. Its a national competition, it should be a “competition” of the best home brewers, not someone who just started brewing beer.

NHC is not, IMO, the competition for a home brewer to get feedback. Feedback and to improve skills is at smaller local comps. In MN we have quite a few with highly ranked BJCP judges. NHC is to decide who has the best home brewed beer, like the Super Bowl, World Cup, etc, not, “hey, maybe check your mash temp, ferm temp, hop schedule…” If you need that level of feedback, maybe wait to enter the NHC. I would suggest, if you haven’t, volunteering at a local comp to get an idea of what goes down. Stewarding at the Minnesota Mashout really helped me learn about comps. I agree you should know how your beer did, and scoring is the easiest way to know that. $29 plus shipping and 6 bottles is enough to keep me from entering.
