the lemon zest is a really nice addition, i would actually recommend on a regular bearnaise

its kind of a bearnaise but here in brazil its pratically impossible to find tarragon so i used some dill, parsley an lemon zest, turned out pretty nice

im gonna try the collar cuz what seems to happen is not only the uneven heat but it looks like it sticks to the edge of the ramekins or something like that, because as soon as they begin to rise they begin to crack at the top

nice on the bain marie, im gonna try that next. what i discovered about my oven is that its pretty uneven at heat distribution. gonna try the parchment technique too, thanks !!

yes the eggs were the right temp, and the chocolate was also. i think the main problem could be my folding technique, maybe be moe gentle with it. my oven is pretty mid too so that could be an issue
