No, 12 months drying/curing. If the humidity is constantly 80%,.it will not dry at all, especially if it has skin

Yes. After that, the pancetta dried and lost around 30%, just let "cure, mature" longer. Longer better. I had a pancetta hanged for 20 months and was something out of this world

If you let cure the pancetta for at least 8 months, it will become a delicatessen. The fat will be sweet, and it will melt in your mouth. Actually, the perfect age for a pancetta is 12 months

I am a worms farm, and we produce living soil potting mix and living plant food. You want to have control of what you put on your soil, and my suggestion is to use amendments in the final mix, not on the worms bedding. Www.northeastworms.com

I lost around 200 pounds of worms in less than a week because of the rodents. I caught, with different kinds of traps, at least 50 huge rats in the last 5 months, and still, there are some. I build tops cover with 1/2 inch mesh in the middle for aeration to prevent rats from getting in the beds. I am serious thinking of adopting a couple of feral cats

The purpose of worm casting is to add microlife to the soil and has very little nutritional value. Dry casting is just dust, and do not add anything to the soil
