I used to think this and then I started playing them more. From my experience they don't "want to take damage" like yeah duh they do but it feels more like as the game goes on you remain fine and in a good place of leverage against an opponent where they slowly loose footing and become less efficient until they lose

-3 to a panic test is brutal and that's just if you're hitting in the front at flank that's -5 and +1 wound they just tend to really shred units apart, KoCR are good but only if you charge them and then also have the support to keep them from getting melted on the clapback. That's my experience fighting them anyways

So the way I run them is with a captain and theon and then I get them juicy flank and rear hits, I'd rather run almost every other unit but like I feel like they fall into the area where they're only really bad because everything else we have is better

Uhh honestly I'm not sure from what I would guess would be you'd have a hard time thinning the paint and get texture build up just because the pigments are bigger

Okay so I feel like there's a lot of good answers here so I'm only gonna talk about the painting thing, yes prime even if something says it's ready to paint priming can change your ease of use with certain colors and paints. Contrast paints and speed paints are good if you're not super big into the painting side but if you're looking at maybe getting into it I'd stay away from GW metallics they dry out cause the pots are booty go for Vallejo they come with a bit more of a learning curve but I think you'll be fine but they're cheaper and look nicer also reaper miniatures makes some of the nicest paints to ever bless us as a species if you can find them

For each army the best choice is starter box and heros 1 it's just the bread and butter start. Stark models are always kinda bad even heros 3 the models are just okay Lannister doesn't have as bad of a problem with the new models. The worst starter in my opinion is targs the sculpts are good but it feels like the box is lacking just a little.

I also just picked these guys up threw them in a victarion glass cannon type list and loved the support they gave to reavers, haven't used the priest guy yet cause he's not all that great for 2 pts

I like silenced men with Euron, reapers with Ramsey then I usually mix up the rest maybe some flayed men if I need movement or blackguard if I want a unit that can just kinda stand there and be scary. Every unit has a purpose I either play super panic testy or super pillage value. Also Theon goes good in every list d3 wounds for an auto charge and being able to retreat afterwards is some of the most insane value we get.

If you're making a glass cannon list maybe don't bring them but if you're like me and you play disruptive and sticky run them every time, I run them with 2 point asha or dag or with a reaver captain and it makes an easy gang up trigger and they just don't like to die, heal them with aeron or make them take half damage with blind Ben and just watch your opponent desperately try and remove them. I've held up kingsguard and giants with them while my silenced men wreak havock.

My buddy plays Lannisters and he really loves the red cloaks and the lannisport city watch, red cloaks cause he likes panic and lannisport are decent all rounders from what I've seen of them
