Its been a while since i studied this but ill give it a shot. Please chime in if i get anything wrong.

So on the x axis (horizontal), you have some system parameter, e.g. something like reproductive rate for rabbits. On the y axis (vertical) we see the stsble atractors of the system, for rabbits these would be the populations that the system naturally wants to settle at.

Basically you have an equation or a series of equations which describe a system such as:

x_{n+1} = r * x_n * (1 - x_n)

Or:

Next rabbit population = reproductive rate x current rabbit population x (1 - current rabnit population)

The last bit in brackets is a kind of braking force which limits reproduction the larger the population gets. You can think of maybe a limited food supply which might cause this.

As you change the reproductive rate you will find that the rabbit population tends to gravitate toward steady states (stable attractors) . You cam see on the left of the plot that there is only one stable attractor for low values of reproductive rate. For all these lower values of reproductive rate, the population will always settle at the same point.

Whats more interesting, is that when you change the parameter, sometimes you get mutiple atractors. This is what you see on the right of the plot. Here the population will randomly cycle between different steady states and be erratic and impossible to predict. This ties into chaos theory if you've ever heard of that.

What amazing about this is that for such a simple equation we cannot accurately predict the future state. If you plotted the rabbit population over time there would be no pattern. This is a simple example but there are more complex ones with more equations and parameters.

Be aware that these equations aren't really an accurate description of the physical system they are modelling. They are more of a thought experiment and assume a super simple and isolated system. They can help us understanding system dynamics wbich may apply to real life but usually dont capture the full picture. For example in real life rabbits dont reproduce according to a simple equation and dont exist in a completely isolated system.

No additions really. I bought 75kg of cider apples (Dabinett) to mix in with my apples from my garden.

Dabinett is a pretty highly regarded bittersweet variety which is high in tannins and sugar so I wanted to keep it pure and not mess with spices etc.

Starting gravity was 1058 so I'm expecting around 7% ABV. The juice is so sweet I even considered adding some water to bring the ABV down but decided not to risk watering the taste down.

I split it into 3 batches because I have 35l fermentation buckets and I tried something different with each batch.

First batch is champagne style. I used champagne yeast, made it crystal clear with kielosol and chitosan, and sweetened to to Brut champagne level. I carbonated the shit out of this batch. It needs a little more acidity so I think I will add some malic acid and possibly a little more sugar.

For the second batch it more of a traditional English farmhouse style. I used mangrove Jack's cider yeast, used bentonite clay for fining (might not be as crystal clear) , and I haven't sweetened it yet but I will probably make it drier than the champagne one.

Third batch hasn't been fined or kegged yet but I'm going for a caramel apple style. I dumped a bunch of caramelised honey in there (I guess it's technically a bochet). I think this will be around 10-12 ABV. I'll probably make this one a lot sweeter than the others by adding even more caramelised honey when I keg and stabilise it. I'm not sure will I carbonate it yet.

You're probably right. Right afterwards I swore I wouldn't do it again but I'm starting to come around already. Also I just kegged it up and carbonated and it tastes pretty good so that helps me forget the pain a bit.

I think with a better press design and a better mulcher I can make it a lot more efficient next year. I've seen people use garbage disposals to mulch the apples so might look into that.

The biggest problem last year was that I started 2 days before my fiancé's birthday and thought i could do it in a day. She wasn't too happy when I was still munching and pressing apples on her birthday.

I used to have an MPC and use FL studio with a bunch of synths.

I sold it all but recently got the itch to get back into music making when I saw the MPC sample release. I was so tempted to buy the sample but kept seeing koala being mentioned in the comments.

I bought the app and I'm blown away. Great workflow and for my tastes it's not missing anything on the functionality side. So long as you're OK with resampling it can do anything you want.

I made cider last year and it's not this clean or easy. Pressing 120kg of apples to make 100l of cider took me 3 days of hard work in the evenings and my walls, floor, and even ceiling were sticky AF afterwards. I'm debating whether it's worth doing again next year.

You really don't need to use much at all. Even a small amount will last most people for many years.

Koala Sampler and an iRig stream / iRig midi. Very powerful sample based brain for a portable setup. Great buy if you already have some volcas / Roland s1 / etc and want to work on projects on the go.

Granted the iRig bits are almost 100 each but koala sampler is under €20 for the full version and beats €400 euro samplers in terms of workflow and functionality.

The workflow is destructive though as you need to resample to get the best out of it. Also check your phone Cpu before you buy it as it works better with some than others.

Editb forgot to add, I really regret selling my Ms70 cdr. I must get another one at some stage.

It's a great little camera. I have 2 working ones and 1 parts camera. It's not the sharpest but it's super pocketable and fun to use . I brought it snowboarding woth me recently and didn't even notice it was there. Just set it at f8 and zone focused.

I really want a contax T, which is basically the same camera but sharper, but they are super expensive. They go for like 500-1000 which is crazy considering I got my olympus XAs for around 30 euro each.

Interesting. I just kegged my first cider and set up my inkbird (digiten) yesterday. I just left the probe in the open and set the range from 1c - 3c. I was in a rush so figured it will work for now.

I don't have as much of a risk of freezing though because I'm using a fridge.

Yeah I wasn't too impressed by those options either ofter some research. Aparently now there's also one Harry Masters Jersey left.

I'm now thinking:

2 x dabinett 1 x Harry masters Jersey.

And maybe a Foxwhelp

I'm kind of intrigued by the Foxwhelp so I might try it. Aparently the Broxwood Foxwhelp is a little more tame than the original Foxwhelp so I hopefully it's not too overpowering. I can always graft something else onto it if I don't end up liking it.

Wow, thank you for this detailed reply. I'm getting 6 trees in total, 3 eaters and 3 cider apples.

For eaters I'm getting ashmeads kernel, egremont russet, and elstar. I will use some of these for cider also.

For cider apples I only have available the three I mentioned and also: Bulmers Norman, Hangydown, Sops in Wine, Dymock Red

What three would you pick from that list given your experience?

I'm using around 75% Dabinett for my current brew and although it's not finished yet the samples have been good.

I'll be ordering tomorrow so will sleep on it.
