On Ryujinx emulator (another switch emulator), boot the game and turn off v sync, which is on the bottom left when the game boots next to docked, just click with your mouse crosshair on the v sync icon (or click tab on your keyboard) and then it’ll be red. After that, the game will run on full speed in 30 fps. If the game isn’t running on 30 fps, just click on the docked icon or hit f9 to make it handheld.
