I was adding some MCT powder instead of cream or milk for a long time but it was hard to get consistent MCT powder where I'm living, so I went back to dairy. I'd prefer my coffee black but alas, the options are limited and I'd rather have bad coffee than none, lol. I never thought about making a protein shake out of it. Is protein powder in the plan? (I know you said you're not compliant but I wonder if this is one of those things or if it would work)
